Ingredients

Spiced Banana Loaf

500g Bakels Gluten Free Banana Bread Mix
¾ Cup of Water
4 Tablespoons Vegetable Oil
1 Cup Mashed Banana
1 Teaspoon Ground Cinnamon
½ Teaspoon Ground Clove
½ Teaspoon Cardamom
Earl Grey Frosting

80g Butter - Room Temperature
170g Icing Sugar
50ml Milk
3 Earl Grey Tea Bags (10g Loose Leaf)

Method

  1. Preheat oven to 170°C bake and grease a loaf tin, then set aside.
  2. Pour the water and oil into a mixing bowl, then add in the Bakels Gluten Free Banana Bread Mix, cinnamon, cardamom and ground clove and whisk until combined.
  3. Mash banana and fold this through the mixture.
  4. Pour into prepared loaf tin and bake for 30-35, or until a skewer comes out clean.
  5. Remove from the oven and allow to cool completely before icing.
Frosting
  1. To make the buttercream, start by steeping tea bags in 50ml of slightly warmed milk.
  2. Leave and allow to cool completely.
  3. Beat the butter in a bowl for 5 minutes or until light and fluffy.
  4. Then add in the icing sugar in two stages, beating for 3 minutes between each addition.
  5. When the milk has cooled, strain and remove tea bags and beat 1 tablespoon of tea infused milk into your buttercream.
  6. Depending on consistency, add more milk a bit at a time until fluffy and spreadable.
  7. Cover the top of your cooled spiced banana loaf with buttercream, slice and enjoy.
